玉米粒中含有水分、蛋白質和澱粉，不同品種Є玉米，؀含的成份比例都不同，並不是任使米都可以用޹爆米花?你應該也吃過沒有爆開Є玉米吧?). 用޹爆米花Є玉米，在新鮮的時候，含水量約?6％，ͺ使它爆開，必將含水量降到13％～14％。在爆米花時，可以使用油，或是用爐火將玉米粒ɠ熱到極高的溫度。當溫度升時，玉米粒內部的水份ɧ沸騰變成水蒸氣，由於玉米粒的外殼相當硬，؀以水蒸氣跑不出，結米粒內部Є壓ɛ越變越大，後終於「砰᫚一聲爆開！這時水蒸氣迅͟散失到空氣中，留下澱和蛋白質外翻形成乾燥蓬鬆Є爆米花?/p>
